Ingredients

  • 4 lb. BonelessPrime Rib Roast (center cut & tied) Go to a good butcher shop in your area
  • 2 tbsp. Extra Virgin Olive Oil
  • 1/2 cup Boo and Henry’s Rub Me Tender Dry Rub Seasoning
  • 8 lb. Charcoal
  • 1 lb. Apple Wood Chunks
  • 8 oz. Sour Cream
  • 2 oz. Prepared Horseradish
  • 1 oz. WorcestershireSauce
  • 1 oz. Lemon Juice
  • 1 tsp. Kosher Salt
  • 1 tsp. Black Pepper

Directions

  1. Marinate Prime Rib with Olive Oil and Dry Rub seasoning. (Refrigerate at least 1 hour)
  2. Start fire and smoke over indirect heat at 250F for 4 hours. (turn every hour)
  3. Mix sour cream, horseradish, Worcestershire, lemon juice, salt, pepper and chives in bowl. (Refrigerate)
  4. After Prime Rib is done, let rest for 15 minutes before cutting.
  5. Serve with Horseradish sauce.
