Fresh Kale, Apple, and Walnut Salad
A terrific, modern twist to the traditional Thanksgiving feast, and a great side dish for all of your holiday gatherings

Servings 4 6 oz. servings
- 2 heads Rainbow Kale (small rough chop)
- 1/2 Onion (finely diced)
- 1 Granny Smith Apple (small dice)
- 1/4 cup Toasted Walnuts (chopped)
- 1/4 cup Goat Cheese (crumbled)
- 2 tbsp Boo and Henry’s BBQ “Rub Me Tender” Dry Rub Seasoning
- 5 tbsp Apple CiderVinegar
- 1/4 cup Canola Oil
[Note: Takes only 30 minutes to make, but allow a few hours to refrigerate to serve chilled. A great dish to make early and get out of the way.]
Blend vinegar and oil in mixing bowl and whisk together with the dry rub seasoning.
Toss all of the dry ingredients together and mix with Apple Cider Dressing.
Refrigerate and serve chilled.
