Smoked Prime Rib w/ Creamy Horseradish

Ingredients
- 4 lb. BonelessPrime Rib Roast (center cut & tied) Go to a good butcher shop in your area
- 2 tbsp. Extra VirginOlive Oil
- 1/2 cup Boo and Henry’s “Rub Me Tender” Dry Rub Seasoning
- 8 lb. Charcoal
- 1 lb. Apple Wood Chunks
- 8 oz. Sour Cream
- 2 oz. Prepared Horseradish
- 1 oz. WorcestershireSauce
- 1 oz. Lemon Juice
- 1 tsp. Kosher Salt
- 1 tsp. Black Pepper
Instructions
- Marinate Prime Rib with Olive Oil and Dry Rub seasoning. (Refrigerate at least 1 hour)
- Start fire and smoke over indirect heat at 250*F for 4 hours. (turn every hour)
- Mix sour cream, horseradish, Worcestershire, lemon juice, salt, pepper and chives in bowl. (Refrigerate)
- After Prime Rib is done, let rest for 15 minutes before cutting.
- Serve with Horseradish sauce.
