Fresh Kale, Apple, and Walnut Salad

A terrific, modern twist to the traditional Thanksgiving feast, and a great side dish for all of your holiday gatherings

Ingredients
  

  • 2 heads Rainbow Kale (small rough chop)
  • 1/2 Onion (finely diced)
  • 1 Granny Smith Apple (small dice)
  • 1/4 cup Toasted Walnuts (chopped)
  • 1/4 cup Goat Cheese (crumbled)
  • 2 tbsp Boo and Henry’s BBQ “Rub Me Tender” Dry Rub Seasoning
  • 5 tbsp Apple CiderVinegar
  • 1/4 cup Canola Oil

Instructions
 

  • [Note: Takes only 30 minutes to make, but allow a few hours to refrigerate to serve chilled. A great dish to make early and get out of the way.]
  • Blend vinegar and oil in mixing bowl and whisk together with the dry rub seasoning.
  • Toss all of the dry ingredients together and mix with Apple Cider Dressing.
  • Refrigerate and serve chilled.
