Smoked Prime Rib w/ Creamy Horseradish

  • 4 lb. BonelessPrime Rib Roast (center cut & tied) Go to a good butcher shop in your area
  • 2 tbsp. Extra VirginOlive Oil
  • 1/2 cup Boo and Henry’s “Rub Me Tender” Dry Rub Seasoning
  • 8 lb. Charcoal
  • 1 lb. Apple Wood Chunks
  • 8 oz. Sour Cream
  • 2 oz. Prepared Horseradish
  • 1 oz. WorcestershireSauce
  • 1 oz. Lemon Juice
  • 1 tsp. Kosher Salt
  • 1 tsp. Black Pepper


  • Marinate Prime Rib with Olive Oil and Dry Rub seasoning. (Refrigerate at least 1 hour)
  • Start fire and smoke over indirect heat at 250*F for 4 hours. (turn every hour)
  • Mix sour cream, horseradish, Worcestershire, lemon juice, salt, pepper and chives in bowl. (Refrigerate)
  • After Prime Rib is done, let rest for 15 minutes before cutting.
  • Serve with Horseradish sauce.
